Ground to a 10° angle on each side, far finer than the 20° of a typical Western knife. Meat and vegetables part with almost no pressure.

Hard enough to hold that edge, tempered so it flexes rather than chips. The balance Japanese smiths have chased for centuries.

Layered steel, folded and forged, gives each blade its flowing wave pattern. No two are the same.

磁ji · magnet
The magnetic stand
Traditional knife blocks hide blades in dark, damp slots where water collects and mould grows. The Nami stand does the opposite: strong magnets hold each knife flat against solid wood, in the open air, where it dries completely and where you can see it.
A vein of stone-patterned resin runs through the wood like a mineral seam, so the stand is as much a piece for the counter as the knives it carries. Choosing a knife takes a glance; taking it takes one hand.

花hana · the rivet
A small gold flower, set into the wood.
Look closely at each handle and you will find a single gold rivet, pressed into the wood in the shape of a flower. It holds the handle to the steel, and it is the one place on a Mihama knife where we allowed ourselves an ornament.
